North Cork Creameries: A Taste of Summer Apple Cake

Ingredients

337g plain flour

1 teaspoon of baking powder

150g Ór-Real Irish Butter softened

150g sugar

2 eggs

150ml milk

2 big cooking apples

1 teaspoon of cinnamon


Method

Preheat oven to 180°c fan. Butter a pie dish. Mix flour with baking powder. Rub in Ór-Real Irish Butter with your fingertips until the texture resembles breadcrumbs. Add sugar, beaten eggs and milk to form a soft dough. Pat out half of the dough in greased pie dish (don’t worry — it is supposed to be very wet).

Peel, core, and chop apple 3/4-inch cubes. Arrange apples on the dough and sprinkle with 1 tablespoon of sugar and cinnamon. Gently spoon out the remaining dough on top of the apples to cover them completely. Sprinkle with remaining sugar and cut a slit through the middle of the top dough. Bake for 40–50 minutes, until golden and crunchy on the outside (apples should be soft on the inside).

Perfect with whipped cream or custard
