Buttery Irish Porridge with a Comforting Spiced Apple Compote.
A delicious winter breakfast recipe using Ór-Real Irish Butter is classic Irish Porridge topped with a warm and comforting spiced apple compote. This hearty and cozy dish will keep you warm on chilly mornings.
Ingredients
For the Porridge:
- 1 cup steel-cut oats
- 4 cups water
- Pinch of salt
- 2 tablespoons Ór-Real Irish Butter
- 1/4 cup whole milk or cream (optional, for extra creaminess)
For the Spiced Apple Compote:
- 2 apples, peeled, cored, and diced
- 2 tablespoons Ór-Real Irish Butter
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- A pinch of salt
- 2 tablespoons water
Method
- Prepare the Spiced Apple Compote:
- In a saucepan, melt 2 tablespoons of Ór-Real Irish Butter over medium heat.
- Add the diced apples and cook for about 2-3 minutes, or until they start to soften.
- Stir in the brown sugar, ground cinnamon, ground nutmeg, ground cloves, and a pinch of salt. Cook for an additional 2-3 minutes until the sugar is melted and the spices are fragrant.
- Add 2 tablespoons of water to the saucepan and stir. Reduce the heat to low, cover, and simmer for about 10-15 minutes, or until the apples are tender and have a nice compote-like consistency. Stir occasionally, and add a little more water if needed.
- Prepare the Oatmeal:
- In a separate saucepan, bring 4 cups of water to a boil. Add a pinch of salt.
- Stir in the steel-cut oats and reduce the heat to a low simmer.
- Cook the oats for about 20-25 minutes, stirring occasionally, until they are tender and have absorbed most of the water. If you prefer a creamier texture, you can stir in 1/4 cup of whole milk or cream during the last 5 minutes of cooking.
- Once the oatmeal is done, remove it from the heat and stir in 2 tablespoons of Ór-Real Irish Butter until it melts and is well incorporated.
- Serve:
- Spoon the creamy, buttery oatmeal into serving bowls.
- Top each serving with a generous dollop of the spiced apple compote.
- Garnish with a sprinkle of cinnamon or a drizzle of honey if desired.
